1. Clean the skin thoroughly. Place the hide on a smooth, clean wooden board. Use a blunt knife to scrape away fat, leftover meat, and coagulated blood. When removing the grease, work from the tail towards the head, scraping along the hair roots. It's important to note that fresh hides should never be washed with water, as this can cause them to lose their natural oiliness and become "waterlogged," which weakens the quality and appearance of the skin.
2. Once cleaned, shape the fresh hide properly. Make sure the hide is straight and square in form. For the neck area, gently stretch it to even out the thickness, and for the waist, pull it lightly to create a balanced shape. Proper shaping helps in achieving uniform drying and better final product quality.
3. The marination process for Beijing sun-dried skin typically uses the salting method. After cleaning, lay the fresh hide flat on a cement floor, smoothing out the edges, head, and feet. Spread a layer of salt over the surface, then continue stacking the hides until reaching the desired height. Apply salt between each layer and let it sit for 5-6 days. Then turn the hides over, reapply salt, and repeat the process for another 5-6 days. This ensures thorough preservation and enhances the texture of the skin.
4. Drying the skin is best done in the shade or under gentle sunlight. Avoid direct exposure to strong sunlight or fire, as this can cause uneven drying or "focal" spots, which damage the hide’s integrity. Proper drying is essential for maintaining the skin’s strength and durability.
5. During cold winter months, it's best to expose the skin to the morning sun when temperatures are milder. Avoid leaving the skin outside during freezing conditions, as this can cause cracking or damage. Once dried, store the skins in a dry and well-ventilated area. Turn them over every few days to ensure even air circulation and prevent mold or mildew. This practice continues until the skins are ready for sale.
