1. Clean the skin thoroughly. Place it on a smooth, clean wooden board. Use a blunt knife to scrape away any excess fat, remaining meat, and coagulated blood. When removing the grease, start from the tail end and work your way toward the head, scraping along the grain. It's important to note that fresh skin should never be washed with water, as this can cause it to lose its natural oils and become a "water-logged" skin, which affects its quality and durability. 2. Once cleaned, shape the fresh skin properly. Make sure it is straight and square in form. For the neck area, you can gently stretch the skin to even out the thickness, while the waist area should be pulled slightly to achieve a balanced look. Proper shaping ensures better preservation and a more uniform appearance during the curing process. 3. The marination process for Beijing-style sun-dried skin typically uses the salting method. After cleaning, lay the fresh skin flat on a cement floor, smoothing out the edges, head, and feet. Spread a layer of coarse salt over the surface, then stack additional layers of skin, continuing to sprinkle salt between each layer until the desired height is reached. Let it sit for 5–6 days, then turn the skins over and repeat the salting process. This second round of salting also lasts 5–6 days, ensuring thorough penetration of the salt and proper preservation. 4. Drying the skin is best done in the shade or under indirect sunlight. Avoid direct exposure to strong sunlight or heat sources, as this can cause uneven drying or "focal" spots—areas that become overly dry or damaged. Proper drying helps maintain the texture and quality of the skin. 5. During colder winter months, it's best to sun the skin in the morning when the temperature is milder. Avoid leaving the skin outside when it's too cold, as freezing can damage the structure and reduce its value. Once dried, store the skin in a dry and well-ventilated area. To ensure even drying and prevent moisture buildup, turn or "dump" the stack every few days until it's ready for sale. This careful handling ensures the final product remains high quality and long-lasting.
