Identification of sea cucumber>
Sea cucumbers are considered a premium delicacy, highly valued by consumers for their nutritional benefits and unique flavor. However, the rising demand has attracted unscrupulous traders who resort to unethical practices to maximize profits. During the drying process, some of them use misleading methods to increase the weight of the product. For instance, lighter sea cucumbers are often filled with sand and salt, making them heavier and more deceptive. Worse still, some traders use chemical treatments to preserve fresh sea cucumbers, then dry and sell them, a practice that has been widely exposed by various media outlets.
When selecting dried sea cucumbers, it's essential to carefully inspect the quality. High-quality sea cucumbers should be large in size, evenly shaped, and well-dried (with moisture content below 22%). They should have a firm texture, full body, thick meat, intact spines, and no visible damage or dirt. A fresh, lustrous appearance is also a good indicator of quality. On the other hand, substandard products may appear uniform but tend to be dry and thin, with some showing signs of skin peeling or minor punctures. Their internal structure might be weak, and they may contain less of the urinary bladder and sediment than expected.
Poor-quality sea cucumbers often look unattractive and lack the natural plumpness of genuine ones. When choosing, look for those that are full-bodied, heavy for their size, with sturdy, upright flesh and no surface blemishes. The cut should reveal thick, firm meat, indicating freshness. In contrast, low-quality sea cucumbers may have irregular shapes, thin bodies, or signs of damage. Some traders intentionally leave these inferior products behind to hide spoiled batches.
Additionally, the physical characteristics of dried sea cucumbers can reveal whether the original was properly handled. If the sea cucumber was not processed in time, it may retain excess water, leading to spoilage and microbial contamination. Some untrustworthy sellers even stuff the inside of fresh sea cucumbers with salt or alum, mix them with sand or iron particles, and then boil and dry them. These fake products often have thin, brittle skins, an unnatural round shape, and a soft, sensitive texture. Sea cucumbers treated with alum may appear dark gray, feel hard and fragile, and lack the natural sheen of real ones.
Therefore, being cautious and informed when purchasing sea cucumbers is crucial to avoid falling victim to fraud. Always check the texture, weight, color, and overall appearance before making a purchase.
