Identification of sea cucumber>
Sea cucumbers are considered a premium food item, highly praised by consumers for their nutritional value and unique taste. However, unscrupulous traders often exploit this demand by using deceptive methods to increase profits. During the drying process, some of them fill lighter sea cucumbers with sand and salt to artificially boost their weight. In more extreme cases, they use chemical treatments to preserve fresh sea cucumbers, which not only compromises their quality but also poses health risks.
Various media reports have exposed these unethical practices. When choosing dried sea cucumbers, it's important to carefully inspect the product. High-quality sea cucumbers should be large in size, evenly shaped, and fully dried (with water content below 22%). They should have a firm, plump body, well-developed muscles, intact spines, and no signs of damage or contamination. Their surface should look clean, bright, and fresh, without any coliform bacteria or sediment.
On the other hand, low-quality sea cucumbers may appear uniform in size but tend to be dry and thin, with slightly damaged skin or small punctures. Their internal structure is weak, and they may contain less moisture and fewer nutrients. Some substandard products even lack proper body shape and have an unnatural appearance.
Poorly processed sea cucumbers often show signs of being improperly handled. Traders sometimes remove the rotten parts, leaving behind incomplete or damaged specimens. These may have not been properly dried, leading to microbial contamination and spoilage. Some untrustworthy sellers even inject salt or alum into the sea cucumbers, mix them with sand or iron filings, and then boil and dry them to make them look more appealing. Such fake products are usually thin-skinned, hollow inside, and have a white, soft texture.
Sea cucumbers treated with alum tend to have a dark gray color, lack luster, and feel brittle when touched. These are clear indicators of poor quality and potential health hazards. Therefore, when purchasing sea cucumbers, buyers should be cautious, look for a full, plump body, a thick and sturdy texture, and a clean, natural appearance. A good sea cucumber should not only look healthy but also feel solid and fresh to the touch.
