Study on Extraction Conditions of Grape Skin Pigment

Department of Environmental Engineering, Liaoning Shihua University, Fuxing, Liaoning, China;

Abstract: The natural pigments were extracted from the grape skin of the grape beverage factory, and several factors affecting the pigment extraction rate were studied. These factors include the choice of extraction solvent, extraction temperature, pH extraction, amount of extractant, and the like. The results show that the best conditions for achieving the maximum extraction rate in the extraction of natural pigments from grape skins are: a ratio of material to liquid of 1:7, with a concentration of 80% ethanol solution and 0.5% citric acid solution (5:1). The mixture is used as an extract; the pH of the solution is adjusted to be between 2-4; heated in a water bath at 60-80 ° C for 70 min; finally filtered, concentrated under reduced pressure, dried, and Higher extraction rate of grape skin pigment.
